Let the fire 🔥 cook the must! We started yesterday and for the first week we will cook only what we need for the #reggioemilia #traditionalbalsamicvinegar #dop . Blend of #organic #lambrusco #marani #maestri and #ancellotta. We will cook for a very short time in order to allow a nice and easy fermentation. We think that Thickness and density must be reached ONLY through the ageing in the wooden barrels, and not thanks an over cooking at the beginning
